Pumpkin Spice Apple Cobbler

I cannot get enough apples this season. I have been having so much fun coming up with delicious ways for my family to enjoy these delicious apples. As Thanksgiving approaches, I have to share this SUPER easy apple cobbler I came up with using Michigan apples and cookies as the crust on top!  I mean how can you resist a gooey apple pie filling topped with chewy yet crunchy cookies? There is nothing better!


Yield: 4 servings

INGREDIENTS:

  • 2 ea Michigan apples

  • 1/4 cup brown sugar 

  • 1/4 cup granulated sugar 

  • 1 tbsp lemon juice

  • 1/2 tsp pumpkin spice 

  • 1 tbsp maple syrup 

  • 1/2 tsp salt

  • 2 tbsp corn starch

  • 2 tbsp water 

  • 1 package (9.6 oz) cookie dough (I like using Sweet Loren’s pumpkin cookies) 

DIRECTIONS:

  1. Peel, core and large dice the Michigan apples. The 2 apples should equal 3 cups once cut, or 14 ounces by weight. 

  2. Mix the apples with the brown sugar, granulated sugar , lemon juice, maple syrup, pumpkin spice and salt. Let sit for 10 minutes to allow the fruit to macerate and the juices to release. 

  3. Mix the cornstarch and water to make a cornstarch slurry. 

  4. Mix the cornstarch slurry into the apple mixture.

  5. Bring the mixture to simmer on low heat, the liquid should become hot and thicken and the apples will become slightly cooked, but we do not want them cooked all the way at this point. 

  6. Cut or crumble the cookie dough into small pieces. Top the apple mixture with the cookie pieces. 

  7. Bake uncovered at 350F for 20 minutes,  the cookies should be golden brown and the apples will be tender and fully cooked. 

  8. Serve warm and top with ice cream!
